Simmer milk with lemon zest and pour over fresh breadcrumbs. Let them soak.

Beat butter, sugar, and egg yolks, then stir into the breadcrumbs.

Spread a layer of raspberry jam onto the bottom of a baking dish.

Pour the bread mixture over the jam.

Bake at 180°C for around 30 minutes until set.

Top with a meringue made from the egg whites and sugar, then return to the oven to brown the top.
