Slice the eggplants and potatoes into thin rounds, and sprinkle with salt; let them sit for 30 minutes.
In a pan, heat olive oil and sauté chopped onion and garlic until translucent, then add ground beef and cook until browned.
Add chopped tomatoes, salt, and pepper to the beef mixture and simmer for 10 minutes.
Rinse and dry the eggplant slices, then fry them in olive oil until golden brown.
Layer the potatoes, eggplants, and beef mixture in a baking dish, finishing with a layer of eggplants on top.
Sprinkle grated cheese over the top and bake in a preheated oven at 180°C for 30 minutes.
