Rub butter into self-raising flour mixed with cinnamon and nutmeg.

Stir in brown sugar.

Gradually pour in apple cider while stirring, then add the beaten eggs.

The batter should be smooth and fragrant.

Pour into a lined cake tin and bake at 180°C for 45-55 minutes until a skewer comes out clean.
